Simple Curry – Derval O’Rourke (Serves 4)

INGREDIENTS

  • 1tbsp coconut oil
  • 2 onions chopped
  • 4-5 cloves garlic
  • Thumb size piece of ginger grated
  • 2 tbsp medium curry powder
  • 1 tsp garam masala
  • 1 tsp ground coriander
  • ½ tsp chilli flakes
  • 10 apricots
  • 3 apples peeled and chopped roughly 
  • 3 peppers deseeded and chopped roughly 
  • 2 tbsp tomato puree
  • 700mls chicken stock
  • Salt and pepper
  • 4 chicken or turkey breasts 
  • Basmati rice

INSTRUCTIONS

  1. Heat the oil in a large pan over medium heat
  2. Add the onions and cook until softened
  3. Add the garlic, ginger and spices and cook for 3 mins stirring occasionally  
  4. Stir in the apricots, apples, peppers, tomato puree and chicken stock and bring to the boil 
  5. Reduce the heat and cover and simmer for 40-60 mins
  6. (You can divide this into portions and put in containers in the freezer for later use) 
  7. Use a hand blender to blend 
  8. Stir in cooked chicken or turkey
  9. Serve with rice
