Quick and Tasty Ratatouille

INGREDIENTS

  • 1 medium onion diced fine
  • Small knob of butter
  • 1 garlic finely sliced
  • 1 tin tomatoes
  • 1 tsp fresh or dried oregano
  • 1 green pepper diced
  • 1 courgette

INSTRUCTIONS

  1. Cook the onion until sautéed 
  2. Add the tin of tomatoes and garlic
  3. Sprinkle in the oregano and add the diced green pepper
  4. Bring up to temperature
  5. Chop the courgette in half lengthways and then slice it and add to the ratatouille
  6. Cook for ½ hour until the juices thicken while stirring occasionally
  7. Season as required
